These breakfast muffins are great for on the go or for a relaxing moment with your coffee and Facebook! lol
1 1/2 cup whole wheat flour
1/2 cup rolled oats
2 tsp baking soda
1/4 tsp salt
1 TBSP Wildtree coconut Hearty Oatmeal Mix In (use the spice one if you don't like coconut)
Or just use 1 tsp ground cinnamon and 1/2 tsp ground ginger if you don't have a wildtree blend
1 cup unsweetened applesauce
1/2 cup brown sugar
1/4 cup pure maple syrup
3/4 cup blueberries ( i used fresh)
Mix dry then add moist. Stir just to combine. Spoon into muffin tins (about 3/4 full)
Bake at 350 for about 20 minutes.
My batch made 8 muffins and I approximate them at about 140 calories each.
