Low Calorie Mexican Lasagna





This is a delicious one pot meal.  So easy to make and super tasty… you could add taco fixins to the top  after cooking and before serving if you want to… like shredded lettuce, olives, tomatoes, avocado… i might try vegan sour cream or a vegan cheese.  I love it because it is super easy… gives me veggies and is filling... but low calorie.

You can adjust the amounts to make more or less… I made mine in a 7 by 11 glass baking dish but you could make it as large or small as you like.  Use corn tortillas for gluten free! 

For my size:

1 medium zucchini sliced in half moons
1 cup frozen corn ( I love trader Joes brand)
1 cup black beans
3 tablespoons taco seasoning ( I use Wildtree) 
1 package of whole wheat flour tortillas
1 bottle of Enchilada sauce ( I use Wildtree)

I use Wildtree because the products are organic!  Preservative FREE

In a bowl toss the zucchini with corn, black beans and taco seasoning.
Slice the tortillas into strips with a pizza cutter wheel.

Place a small layer of Enchilada sauce in the bottom of the glass baking dish and start layering tortillas, vegetable filling, and sauce… end up with a layer of tortillas and sauce on top

Bake at 350 for 35 minutes… make sure oven is preheated!
