So Easy Italian Vegetable Soup





1 28 oz bag of frozen vegetables for soup
6 cups of water
1 28oz can of crushed tomatoes
1 TBSP spaghetti sauce seasoning (I used wildtree)
8 teaspoons Wildtree vegetable base or 1 carton of vegetable broth (omit 4 cups of water if using carton of broth)
Place all in slow cooker on low for 8 hours (a work day) or on high for 3 to 4 hours. 

I then added 1/2 cup of lentils

You could add white beans or small cooked pasta would be good.  Frozen chopped spinach would add color and vitamins.  

Frozen and chopped spinach would be good.  Be creative and add anything you like in.

Greek Vinaigrette... No Sugar and Organic




I don't always have time to prepare my own salad dressing.  It is nearly impossible to find a prepared dressing that has no sugar.  This one is very greek… strong rosemary and oregano.  I enjoyed it. The color is from the olives and red wine vinegar.  Wildtree uses nothing artificial, that means no dyes.

Shells with Zucchini Tomatoes and Onions (Wildtree Spaghetti Sauce Blend)





1 medium zucchini sliced and halved
1 medium onion finely sliced
1 28 oz can of diced tomatoes 
1 Tablespoon of Spaghetti sauce blend by Wildtree
2 Tablespoons of garlic flavored oil (I used Wildtree)
1 pound of medium shells prepared al dente
1 -2 cups of shredded italian blend cheese

Saute the veggies in the oil with the seasoning until getting soft and then add the tomatoes.  Simmer about 10 minutes while the pasta is cooking.  Taste for salt and pepper needs.

Put the drained pasta in a baking dish and cover with the sauce mixture.  Top with cheese and cover and bake at 350 for 30 minutes!  

You can use whole wheat or gluten free pasta or even spaghetti squash.  You can even leave out the pasta and it is still delicious.

Remember… When you can use ORGANIC…Do it!

Made My Own Vegetarian Sushi





I had left over rice from take out Chinese.  It was white and sticky and I immediately thought sushi.  I will order extra rice next time because it came out great.  I bought the nori sheets and just sliced the cucumbers, carrots and avocado and rolled it up.  I did use some seasoned rice wine vinegar on the rice prior to rolling.  We dipped these in soy sauce!  Fresh and delicious!

Garlic Zucchini and Eggs with Wildtree





1 Teaspoon of garlic oil
1 Teaspoon of butter 
Sliced zucchini
1/8 Teaspoon of garlic and herb blend
Salt and pepper to taste
2 Eggs beaten (or one whole egg and 2 whites, or just whites)

Saute the zucchini in the butter and flavored oil with seasonings until getting nice and brown.  Lower the heat and add the eggs.  Flip when almost set.  Top with cheese if desired.

Delicious breakfast or lunch.  Clean eating real whole foods that taste great.

Wildtree Lemon Rosemary Chicken and Vegetables




Preheat oven to 350
4 Chicken breast trimmed and pounded thin
2 Tablespoons of zesty Lemon Grape Seed Oil
2 Tbsp Butter
2 Tablespoons of Lemon Rosemary Blend
1/4 cup of flour
1 egg 
2 Tbsp water
salt and pepper to taste

Place flour and seasoning in a shallow bowl
beat egg and water in another shallow bowl
Heat a cast iron skillet on stove top with the oil and butter (or other oven proof skillet)

Dredge chicken in flour and then egg and place in hot butter oil mix.  Do all 4 breast and then flip when browned.  When all flipped… place skillet in the oven for 20 minutes or until chicken is cooked through

After vegetables are steamed or microwaved… drizzle with some lemon oil and salt and pepper.

Wildtree Tomato Sauce .... simple -delicious- and sugar free




So simple and really, really good.  You take 20oz of crushed tomatoes and add 1 TBSP of Wildtree Hearty Spaghetti Sauce Blend.  All natural and organic seasoning with 0 grams of sugar.  Delicious sauce in minutes.  I simmered mine for about 20 minutes and added a little salt to taste because it is a salt free product.  Don't let a jar sauce dictate how much sugar and salt you get!  This is healthy and delicious!

Stuffed Pepper and Cauliflower Mash



2 large bell peppers seeded and cut in half

1 pound of ground beef (not super lean)
1 teasp salt
1 teasp pepper
1/4 cup steel cut oats
1 small onion finely chopped
2 TBSP water

1 Jar of sugar free tomato sauce

Mix the meat mixture and make 4 large meatballs.  Place each meatball in a pepper half in a roasting pan.  Pour the sauce on top and bake covered for 1 hour at 350 degrees

Eat the Orange! Ditch the OJ




One small orange is about 45 calories with 2.3 grams of fiber and 9 grams of sugar.  One cup (8oz)
of orange juice is 110 calories with ZERO fiber and 23 grams of sugar.  
Sugar turns to fat in the liver if it is not immediately burned for fuel.  That cup of OJ equals almost 6 teaspoons of sugar where the orange is about 2.25 tsp.  And the fiber in the orange is the most beneficial part.  So when you are needing some OJ… just eat the orange!
