Vegan Fruit Salad!




Take something healthy, delicious, and pretty to the next gathering!  

Chopped fresh apples
seedless red grapes
chopped celery
chopped walnuts
Dairy free vanilla yogurt

Use Wildtree coconut mix in for a tropical flavor if you like coconut!  It's ORGANIC!

Mix well and put in the fridge until ready to serve.  A sweet and tasty treat! Berries would work well too.  I didn't put amounts.  You can make it for one or one hundred!

Low Low Fat Vegan Mac Salad




1 pound of elbow macaroni (your choice, whole wheat, gluten free etc) cooked with salted water according to package directions

while the macaroni is cooking…

In a food processor or blender add:

1 package firm tofu
2 Tablespoons vegan mayo (optional) 
1 teaspoon lemon juice
1 teaspoon white vinegar
1 teaspoon of agave syrup (optional)
2-3 tablespoons pickle relish

You may add wildtree picnic salad blend (it does have a strong flavor and a little goes a long way) or you can leave it out, completely optional.  I added a pinch.

Whiz this until smooth and creamy in a food processor or blender

Chop in a bowl:

Some red onion or green scallion… to your liking. 
a red bell pepper 
a medium cucumber

Mix together the tofu puree, the rinsed and drained elbows and the chopped vegetables.  

Chill in the fridge several hours before serving…. DELICIOUS!

The BEST Low Low Fat Italian Dressing




Mix 1tablespoon dressing mix with  3 tablespoons water and ¼ cup braggs unfiltered apple cider and 2 tablespoons seasoned rice vinegar 
When combined add 3 tablespoons of Wildtree natural Grapeseed oil or olive oil stir well and enjoy!

Beef-less Stew



In my Dutch oven on the stove top I put:

3 cups of water
1/2 cup of Soy sauce
1 Tablespoon of Wildtree Absolutely onion
1 Tablespoon of Wildtree California garlic pepper
1 Tablespoon of Wildtree Hearty Spaghetti sauce seasoning
3 Tablespoons of nutritional yeast
Stir and taste for your need for salt, it will be a very tasty mixture

Bring this mixture to a boil and add…

5 Chopped red skinned potatoes
1 stalk Chopped celery
5 Chopped carrots
1 large or 2 small chopped portobello mushrooms
1 can of green beans 

Simmer on medium until potatoes and carrots are tender.  Once they are tender bring back to a rolling boil and add...

2 tablespoons of Corn starch mixed with 3/4 cup non-dairy milk (I used almond)
Mix this well and pour into stew while constantly stirring.  It will thicken as it comes back to a boil.  

When it is bubbling and thick take off heat and add 1 cup frozen peas.  Serve with fresh bread! 

Thats right a delicious and tasty stew with no fat, no animal products or cholesterol!

Crispy Zucchini With Spicy Tomato Sauce



My first zucchini from the garden!  This is a delicious way to eat tasty healthy squash with no dairy, eggs or oil.

Preheat oven to 400
line a cookie sheet with parchment paper
cut zucchini into rounds

in a shallow bowl pour some non-dairy milk (I used almond)

in a second shallow bowl place about a cup of whole wheat bread crumbs and whatever seasoning you like.  I added some vegan parmesan and Wildtree california style garlic pepper.  

Dip rounds into milk and then press firmly into bread crumb mix to coat.  Place on parchment paper.  

bake for about 10 minutes on each side keeping close eye as not to burn.  They are done when the turn golden brown and have a crisp to them


To make the spicy sauce…
1 20 oz can of good quality crushed tomatoes and 1 tablespoon of Wildtree hearty spaghetti sauce blend with 1 tablespoon of Fra Diavlo blend.  Simmer on low while you are making the zucchini.

Tomato Cucumber Salad with Wildtree Tzatziki Blend



Chop cucumbers, tomato, and red onion 
Add ¼ cup white vinegar
1 tablespoon Wildtree Tzatziki Blend
½ teaspoon of salt
Mix well ... The longer it sits in the fridge the better it tastes!  I like to let it sit a few hours before eating!

Dairy free / Fat Free Red Skinned Potato Salad with Wildtree Dill Blend



Boiled red skinned potatoes cooled and chopped
Chopped celery 
Chopped green onion
vegan sour cream (made with tofu)
Wildtree dill dip blend

DillyVegan sour cream is made by blending a block of firm tofu with the juice of 1/2 a lemon. Add a few drops agave syrup with 1 tsp dry mustard, 1/2 tsp distilled white vinegar and 1TBSP Wildtree dill dip blend.
