Spinach, sun dried tomato, roasted red pepper lasagna!



So good….
Layer no boil lasagna noodles with sauce, spinach, roasted red peppers, sun dried tomatoes and vegan ricotta or regular ricotta cheese.  

I topped mine with vegan parmesan.  Vegan recipes can be found on Happy Herbivore and are fantastic!

Sugar free / Fat free spaghetti sauce by Wildtree

1 can of crushed tomatoes
1 Tablespoon Hearty Spaghetti sauce blend from Wildtree

Cinnamon Bun Smoothie with homemade brown rice milk




Yummy cinnamon bun flavor!  From the Happy Herbivore Cookbook! 

1 frozen banana (peel and freeze in a baggie)
1 cup non dairy milk -  I made my own brown rice milk!
1/2 tsp cinnamon
1/4 tsp vanilla 
1/2 pure maple syrup

Blend in a high speed blender


Brown Rice Milk

make a batch of brown rice according to package directions

In a high speed blender add 1/2 cup cooked brown rice and 2 cups filtered water.  Blend until all grain is pulverized.  Strain into a jar and put in the fridge!

Creamy Vegetable Chowder!




Loaded with fresh carrots, corn, sweet potatoes and spinach.  ZERO animal products and still creamy.  That means no dairy or oils!

Corn Salsa and BBQ Wrap!




This corn salsa can be used in a wrap or eating with chips.  Top a taco salad or burrito with it…. It is that good. I love spicy and this dehydrated jalapeño pepper blend gives it a nice flavor as well as a little kick!  BBQ sauce (such as Wildtree's is great with this wrap) and spinach make this whole wheat tortilla a nutritious lunch! 

1 can of corn (I used fire roasted)
1/4 red onion finely chopped
1/2 large red bell pepper chopped
1 roma tomato chopped
1 Tablespoon of the pepper blend
2 Tablespoons of fresh lime juice
salt and pepper to taste

Put the juice and jalapeño pepper blend in a bowl to re-hydrate while you are chopping the veggies (about 5 minutes).  Add all the other ingredients and chill or leave at room temp for about a half hour and you are ready to enjoy a delicious corn salsa.  Use salt and pepper to taste!

Dill Dip made with Tofu and Wildtree



Non-dairy and delicious!  

Put a block of soft tofu in the blender with a tablespoon of lemon juice and 2 tablespoons of Wildtree organic dill dip blend!  Whiz it up and put it in the fridge to chill.  Great as a dip and delicious on a veggie wrap!

Chocolate Frosting that's Healthy! Yep!



How can it be healthy?  Its made from yams!

1 cup cooked yams
3 soaked dates
2 tablespoons of cocoa powder


Blend in a mini food processor!  

The cake is healthy too!   Look for the recipe in the Happy Herbivore cookbook!

Vegan Rice Noodles and Vegetables in Spicy Peanut Sauce





1/4 lb thick rice noodles cooked according to package 

SAUCE
2Tbsp soy sauce
1 Tbsp chunky peanut butter (i use all natural)
1/4th cup Wildtree sweet and spicy chili sauce
1 clove chopped garlic
1 tsp ground ginger
1 tsp hot sauce of choice ( or leave out if too spicy for you)
Tablespoons of water as needed to thin the sauce

VEGGIES
Steamed chopped broccoli and red peppers

While noodles are cooking make the sauce by adding all ingredients to a skillet.  When sauce is bubbly add the veggies and noodles.  You  can top it with chopped peanuts and green onions…. Delicious!

Vegan Mushroom Gravy. I used WILDTREE organic spices!




This gravy turned out amazing!  I got the recipe from the Happy Herbivore Cookbook!  Google it!  Great low fat vegan recipes.  

I used my HEARTY SPAGHETTI SAUCE (ITALIAN SEASONING) BLEND to enhance her recipe.  I served it over smashed red skin potatoes and Libby's organic canned corn!

Salmon freezer meal.  Put wild caught salmon steaks in a zip lock with 2 tablespoons of garlic grape seed oil and 2 tablespoons of Scampi Blend…. Organic and delicious.  Place in the freezer and take out in the morning… pop in the oven after work.  Served here with steamed brussels sprouts and baked sweet potato!
