Fresh Spinach with Wildtree Garlic Grapeseed Oil and Pasta!



8 oz of your favorite pasta cooked al-dente' in salted boiling water according to package directions reserving 1 ladle of pasta water. 
1 bunch of spinach rinsed
2 red bell peppers chopped
3 Tbsp garlic flavored oil… I use Wildtree
1/2 teaspoon of Wildtree hot and spicy Fra Diavolo Blend (or crushed red pepper flakes)
Salt and peper

Heat the oil and add the peppers to the sauté pan..  season with Fra Diavolo, salt and pepper and stir for a few minutes and then add the spinach to the sauté pan.  The spinach can have some water on it as it helps to steam and wilt. Once the spinach wilts add the hot cooked pasta and 1 ladle of the pasta water. Stir to combine flavors while simmering 1 minute…

Serve with parmesan cheese if desired.

Linguine with Wildtree Alfredo and Clams






8 oz linguini cooked al dente in boiling water (save the water)
1 can minced or chopped clams in the juice
1 clove of garlic
3 tablespoons Wildtree butter flavored grape seed oil
2 slices roasted red pepper from a jar (chopped)
1 teaspoon hot red pepper flakes
1 tablespoon Wildtree Alfredo powder

While the pasta is boiling heat the oil in a sauté pan
when oil is warm to hot put one clove of chopped garlic 
when garlic starts to sizzle add the clams… juice and all 
add the red pepper,  Alfredo powder and red pepper flakes and stir well and lower to a simmer

when the linguine is al dente add it to the pan and heat on high for 4 to 5 minutes while stirring it to mix with sauce… add 1/4 to 1/2 cup of the pasta water … stir… sauce should be bubbling
remove from heat and serve immediately!  Garnish with chives or parsley!

Smashed Red Skins with Scampi Blend




Boil 4 (large) red skinned potatoes in salted water until a knife easily inserts and they are soft
Drain the potatoes ….
In a glass measuring cup heat the following for 40 seconds in the microwave and stir
1/2 cup of milk 
5 Tablespoons of butter and 1/2 teaspoon of scampi blend (butter should melt)

Start mashing the potatoes with a masher and then add the milk, butter and scampi blend…

Garlic and Herb Hummus





Garlic and Herb Hummus

1 can organic garbanzo beans (rinsed and drained)
juice from half a fresh lemon
1 teaspoon garlic and herb blend ( I use Wildtree)
1 teaspoon garlic flavored oil (I use Wildtree's infused grape seed oil)
1 cup fresh cold water

In a food processor add beans, juice, garlic/herb blend, and oil and start to blend
Slowly drizzle in some water about a teaspoon at a time to get the desired consistency (you will not use all of the water).  Remember hummus is a spread and should not be too thin!  I like mine a little coarse and not so smooth and creamy…. This is delicious and healthy.  Taste it and add salt if you like!  

Use it on warm pita or dip veggies in it.  Make a sandwich using whole grain pita and cucumber… so good and so good for you.

15 Minute Cream of Asparagus Soup!



This soup is perfect for a light lunch, a meal starter or a Sunday brunch item.
There is no dairy or added oils to this soup and it takes 15 minutes to make!  It looks elegant and is really inexpensive.

2 15oz cans of asparagus
1 cup unsweetened almond milk
1/2 teaspoon dill dip blend (I use Wildtree)

Add one can of asparagus liquid and all to high speed blender or food processor.  The second can, drain and discard the liquid.  Cut the tips off the second cans asparagus and reserve to garnish.  Place the stems of the second can in the blender with the other asparagus and liquid, add almond milk and dill seasoning.  Blend to smooth!

Heat in a sauce pan stirring frequently until just starts to bubble, serve garnished with tips!  Taste for your salt preference and add salt if you want to!  Black pepper adds a little heat!  Can be served with croutons!

Creamy Dill Cashew Cheese…. Non-dairy… You have to try it… DELICIOUS!

1 1/2 cup raw cashews that you have soaked in water at least 1 hour
3 tablespoons of water
a squeeze of half a lemon
a dash of salt
1 teaspoons Wildtree dill dip blend

To soak cashews put them in a glass bowl and cover with water and let sit at room temp for at least an hour… up to 8 hours is fine.  Drain them before using.  

Place the cashews with all ingredients in a high speed blender or food processor and blend until smooth (may be a little gritty)

Serve on fat free crisp bread or any thing you would use a spreadable cheese on!

Think Spring Split Pea Soup



I love split pea soup!  

In a slow cooker…

2 stalks celery chopped
1 large yellow onion chopped
3-4 large carrots peeled and chopped
1 carton of vegetable broth
1 quart of water
2 tablespoons of salt
1 teaspoon of white pepper
1 bag of green split peas

Cook on low for 4 to 6 hours or on high for 2-3 hours until peas are broken down!

Love your pups? Homemade dog biscuits with WIldtree



MAKE DELICIOUS DOG TREATS (YES I TASTED THEM!)


1 CUP WHOLE WHEAT FLOUR (I USED ORGANIC)
1 EGG
1 TABLESPOON OF CHICKEN SOUP BASE (I USED WILDTREE)
1/2 CUP UNSWEETENED APPLESAUCE
2 TABLESPOONS OF MELTED COCONUT OIL (I USED WILDTREE)
1/2 CUP WHITE ALL PURPOSE FLOUR

MIX ALL THE INGREDIENTS EXCEPT WHITE FLOUR.  DUMP IT OUT ON FLOURED SURFACE.  IF TOO STICKY ADD IN THE ADDITIONAL WHITE FLOUR SO THAT THE DOUGH IS NOT TOO STICKY TO PRESS FLAT OR ROLL OUT.  USE ENOUGH BENCH FLOUR SO THAT IT WILL NOT STICK TO THE SURFACE.  

PRESS OR ROLL TO ABOUT 1/4 INCH THICK AND CUT LIKE COOKIES IN ANY SHAPE YOU WANT.  PLACE ON COOKIE SHEET LINED WITH PARCHMENT PAPER.

BAKE AT 350 TIL CRISP AND GOLDEN… JUST DONT BURN! 

COOL ON A WIRE RACK AND GIVE YOUR DOG A BONE!  TASTE IT FOR YOURSELF!

Asparagus with Wildtree




Steam fresh Asparagus and add it to anything!
Asparagus with lemon rosemary rice/quinoa
Here I added steamed chopped asparagus to a quinoa rice blend that I made according to package directions.
It called for 2 cups of water and 1 cup or rice blend
I added A TEASPOON OF WILDTREE LEMON ROSEMARY SEASONING to the water before adding the rice blend. Bring it to a boil and lower heat, cover, and let simmer 15 minutes or according to package.
When the rice was done I fluffed it and added the chopped steamed asparagus and a squeeze of fresh lemon juice.

Asparagus Salsa
I took the remaining chopped asparagus and added it to chopped red pepper (from a jar, packed in water)  you could use the one packed in oil.  I added 1/4 teaspoon of WILDTREE GARLIC GALORE and a few chopped cherry tomatoes.  1 TABLESPOON OF WILDTREE APPLE BALSAMIC VINEGAR  and I had a great little salsa for on top of crostini or crisp bread.
