Corn Salsa and BBQ Wrap!




This corn salsa can be used in a wrap or eating with chips.  Top a taco salad or burrito with it…. It is that good. I love spicy and this dehydrated jalapeño pepper blend gives it a nice flavor as well as a little kick!  BBQ sauce (such as Wildtree's is great with this wrap) and spinach make this whole wheat tortilla a nutritious lunch! 

1 can of corn (I used fire roasted)
1/4 red onion finely chopped
1/2 large red bell pepper chopped
1 roma tomato chopped
1 Tablespoon of the pepper blend
2 Tablespoons of fresh lime juice
salt and pepper to taste

Put the juice and jalapeño pepper blend in a bowl to re-hydrate while you are chopping the veggies (about 5 minutes).  Add all the other ingredients and chill or leave at room temp for about a half hour and you are ready to enjoy a delicious corn salsa.  Use salt and pepper to taste!
