Sunday Brunch Potatoes and Eggs







2 Large or several small potatoes (pierce and microwave until tender)
1/2 Large bell pepper (red,green, yellow or orange) Chopped
1/2 Small onion chopped
4 Eggs beat
4 Tablespoons of cooking oil or butter (I USE WILDTREE NATURAL GRAPESEED OIL)
1/4 Teaspoon of dill (I USE WILDTREE DILL DIP BLEND)

Serves 2-4 depending on main or side dish! 

Saute … your potatoes, onion, and peppers in the oil until tender and browning.  Sprinkle with the dill seasoning.  When the veggies are tender and browning add the beaten eggs and let eggs set on one side … turn to set on the other side.  

Serve with Ham if desired or your favorite steamed green vegetable.  Healthy and Homemade!
