Vegetarian Quinoa Bean Stew




2 Quarts of water
1 28 oz can of chunky crushed tomatoes (rinse the can with a little water to get it all and add it)
2 Tablespoons vegetable base ( I use Wildtree)
2 Tablespoons of garlic flavored oil (I use Wildtree)
1 green bell pepper chopped
1 onion chopped
1 bag of frozen fire roasted corn and black beans
1 can white kidney beans
1 can pinto beans
1/2 cup quinoa
2 Tbsp chili powder
2 Tbsp smoked paprika
Salt and pepper to taste

In a heavy pot (I use my cast iron dutch oven) Saute onion and pepper in oil.  When tender add spices to oil vegetable mix and stir to combine.  Add water and all other ingredients.  Bring to a boil and then lower to a simmer.  Simmer for 1 hour.
