Made My Own Vegetarian Sushi





I had left over rice from take out Chinese.  It was white and sticky and I immediately thought sushi.  I will order extra rice next time because it came out great.  I bought the nori sheets and just sliced the cucumbers, carrots and avocado and rolled it up.  I did use some seasoned rice wine vinegar on the rice prior to rolling.  We dipped these in soy sauce!  Fresh and delicious!
