15 Minute Cream of Asparagus Soup!



This soup is perfect for a light lunch, a meal starter or a Sunday brunch item.
There is no dairy or added oils to this soup and it takes 15 minutes to make!  It looks elegant and is really inexpensive.

2 15oz cans of asparagus
1 cup unsweetened almond milk
1/2 teaspoon dill dip blend (I use Wildtree)

Add one can of asparagus liquid and all to high speed blender or food processor.  The second can, drain and discard the liquid.  Cut the tips off the second cans asparagus and reserve to garnish.  Place the stems of the second can in the blender with the other asparagus and liquid, add almond milk and dill seasoning.  Blend to smooth!

Heat in a sauce pan stirring frequently until just starts to bubble, serve garnished with tips!  Taste for your salt preference and add salt if you want to!  Black pepper adds a little heat!  Can be served with croutons!
