Southern Caviar


1 can of black eyed peas
1 cup of chopped bell pepper (I use red and green)
1 cup fire roasted corn
½ cup chopped sweet onion
1 can of tomatoes and chilles like Rotel
¼ cup Wildtree apple balsamic vinegar. 

Mix and let the flavors marry for about an hour. Serve with chips or on a baked potato or salad
