Strawberry Chai Cupcake Muffins (fat free/egg free/dairy free)






These come out more like a muffin than a cake but they are mildly sweet and delicious! 

In a blender put the wet ingredients :
1 cup non dairy milk
2 TBSP Wildtree chai tea mix
1 TBSP ground flax mixed with 1 TBSP warm water
¾ cup sliced strawberries 
1 tsp vanilla extract 
Blend this mixture until strawberries are in small pieces. 

In a mixing bowl add and stir dry ingredients:
1 ½ cup whole wheat pastry 
1 ¼ tsp baking powder
¼ cup raw sugar or sweetener of your choice

Make a well in the dry and pour in the wet in two batches mixing until combined 

Pour the batter into muffin tins (I use silicone) just shy of ⅓ cup in each. Makes 8 servings. 

Bake at 350 for approximately 15 min. Test with toothpick. 

Cool and top with cream cheese frosting 

Frosting:
In a bowl use electric mixer to combine:

¼ cup freeze dried strawberries that have  been soaked in ¼ cup non dairy milk
1TBSP Wildtree chai tea
1 cup vegan cream cheese.

Beat until combined and spread on cooled muffins
