Asian Veggie Slaw Steamed Dumplings








Asian Slaw
in my food processor with the chopper blade I put:

1/4 head of cabbage
1 carrot
1 tsp garlic powder
1 tsp ground ginger
1 tsp onion powder
a hand full of fresh spinach
2 large kale leaves with stems removed

Chop this fine and put it in a skillet with 3 Tbsp water and 2 Tbsp rice wine vinegar.  Sauté about 5 min until soft and liquid evaporated. Remove from heat and cool

You can chill this and use it as a slaw on veggie burgers or just eat it.. It is fabulous!

To make the dumplings get your wonton wrappers out!

Put a heaping teaspoon of filling into the wrapper.  With your finger tip, wet the edges of the wrapper with water and seal the dumplings.  

Put them in a steamer basket and steam for 14 minutes (keep moist with a damp paper towel until you fill all the dumplings)
After steaming...
Serve with soy sauce (add garlic and ginger if desired)

So good and veggie packed.  This dish is vegetarian.  To make it vegan … find vegan wonton skins (the ones i found contain eggs).
