Lindsay's Favorite Quick and Easy Breakfast Potatoes

4 Red skin Potatoes (microwaved until tender)
1/2 green bell pepper chopped
1/2 small yellow onion chopped
Extra virgin olive oil to coat the pan
1 tsp paprika
1/2 tsp garlic powder
salt and pepper to taste

After you pierce and microwave 4 large red skinned potatoes chop them into bite sized pieces.  While the potatoes are in the microwave coat the bottom of a skillet with olive oil (be liberal) and sauté the chopped onions and peppers until tender.  Add the chopped potatoes and brown nicely and season with spices before flipping.  

Delicious served alone or with eggs and toast.
