Quinoa with Oven Roasted Brussels Sprouts and Butternut Squash


Peel and chop 1 Butternut Squash, drizzle it with olive oil salt and pepper
roast it in the oven for 40 minutes at 400 degrees

Trim a pound of Brussels and cut in half then drizzle with olive oil salt and pepper and roast in the oven for 20 minutes at 400 degrees

While the vegetables are roasting add 1 cup quinoa to 2 cups water, bring to a boil, cover and simmer 15 minutes on low until water is absorbed.

Toss quinoa, squash and brussels in a baking dish topped with a few pats of butter and place in that 400 degree oven for 15 minutes.

Quinoa is an ancient grain high in fiber and protein and has a nutty delicious taste.  Butternut squash and Brussels are low glycemic index veggies!
