Linguini with Turkey Bolognese



1 pound of ground turkey breast
extra virgin olive oil
1 small onion chopped
2 carrots peeled and chopped
1 jar of crushed tomatoes
a splash of dry red wine
1/2 cup of beef or vegetable stock (boxed)
1 teaspoon of dried italian seasoning
hot pepper flakes (optional)
salt and pepper to taste

1 pound of linguine (cooked to package directions),  Always add salt to the boiling water.

Coat the bottom of a heavy pan with olive oil while you are preparing
the linguine according to the package directions.

Brown the turkey breast in the olive oil and then add the onions, carrots, and seasonings.
When the onions are transparent add the tomatoes wine and stock.  Simmer on medium
low heat until the carrots are cooked through.  Taste for salt and pepper needs and season 
according to your taste. 

When the linguini is done add it to the sauce mixture for about 5 minutes mixing it 
while it simmers.  
Serve with fresh grated cheese!
